Description
A simple, creamy cheesecake bar recipe with graham cracker crust and bright vanilla flavor. Great for weeknights or special occasions.
Ingredients
2 cups crushed graham crackers
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
2/3 cup sugar
2 large eggs
1 tsp lemon juice
1 tsp lemon zest
1 tsp alcohol-free vanilla extract
Instructions
Preheat oven to 325°F and line a 9×13 pan with parchment paper.
Combine crushed graham crackers and melted butter to form the crust. Press into pan and bake for 10 minutes.
Blend the softened cream cheese until smooth. Add sugar, eggs, lemon juice and zest, and vanilla extract. Mix until just combined.
Pour filling over pre-baked crust. Tap pan to remove air bubbles.
Bake for 35 minutes until edges are set and center jiggles slightly.
Cool on counter for 20 minutes, then refrigerate one hour or more.
Cut into bars before serving, wiping knife between slices for clean edges.
Notes
Use parchment paper for easy lifting and clean edges.
Top with berries or dairy-free whipped cream.
Freeze bars individually for future treats.
