Ingredients
1.5 lbs boneless, skinless chicken thighs, cubed
2 medium yellow onions, finely chopped
4 cloves garlic, minced
1 tbsp fresh grated ginger
1 tsp turmeric
2 tsp ground cumin
1.5 tsp coriander
2 tsp garam masala
1/2 tsp paprika
1/4 tsp cayenne
1/2 tsp salt
1/4 tsp black pepper
1 tbsp tomato paste
1 cup crushed tomatoes
1/2 cup plain yogurt
1/2 cup chicken broth
2 tbsp oil
Fresh cilantro
Instructions
Heat oil in skillet or Dutch oven. Sauté onions until golden.
Add garlic and ginger. Stir for 1 minute.
Mix in turmeric, cumin, coriander, garam masala, paprika, cayenne, salt, and pepper. Cook 30 seconds.
Add tomato paste and crushed tomatoes. Stir, cook 5 minutes.
Gently mix in the yogurt to avoid curdling.
Stir in chicken pieces until coated.
Add broth and bring to simmer. Cover, cook for 25 minutes.
Garnish with cilantro. Serve hot.
Notes
Swap yogurt for coconut milk to make it dairy-free.
Freezes well—cool and pack in airtight containers.
Serve with rice or flatbread for a complete meal.
