Ingredients
3 cups shredded cooked chicken
6 cups chicken broth
2 cups all-purpose flour
1 tablespoon baking powder
4 tablespoons cold butter
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Heat a large stockpot over medium heat, add oil and sauté onions, optional celery or carrots.
Add broth and bring to a low boil.
In a bowl, mix flour, baking powder, and salt. Cut in butter until crumbly.
Stir in milk to form dough. Roll out and cut into squares.
Add chicken to broth and season as needed.
Gently drop dumplings into pot. Simmer uncovered 10 minutes, then covered for 10 more.
Serve hot with optional fresh herbs and sides.
