Description
Tender and flavorful chicken kebabs marinated in olive oil, garlic, and smoked paprika. Perfect for weeknight grilling or weekend cookouts.
Ingredients
1.5 lbs boneless chicken thighs or breasts
1/4 cup olive oil
2 tbsp lemon juice
1 tbsp smoked paprika
2 cloves chopped garlic
Salt & pepper to taste
1 red bell pepper, chopped
1 zucchini, sliced
1 red onion, quartered
Instructions
Cut chicken into 1.25-inch cubes.
Whisk together olive oil, lemon juice, garlic, paprika, salt, and pepper.
Marinate chicken in the mixture for 1–2 hours.
Preheat grill or oven to 400–425°F.
Thread chicken and vegetables on skewers.
Grill for 12–15 minutes, turning occasionally, or bake for 18–20 minutes.
Let rest 5 minutes before serving.
Notes
Use metal skewers for stability and even cooking.
Add pineapple or cherry tomatoes for sweet contrast.
Serve with rice or tortillas for a complete meal.
