Description
Chicken Minis are buttery yeast rolls filled with crispy fried chicken nuggets and brushed with a sweet honey butter glaze. A comfort food favorite that blends Southern tradition with modern brunch vibes.
Ingredients
2 boneless chicken breasts (cut into nugget-size pieces)
1 cup buttermilk
1 large egg
1 tsp hot sauce (optional)
1 cup all-purpose flour
1 tbsp cornstarch
1 tsp paprika
½ tsp garlic powder
Salt and black pepper to taste
Vegetable oil for frying
12 yeast dinner rolls (Hawaiian rolls work well)
2 tbsp honey
2 tbsp unsalted butter
Instructions
1. Marinate chicken pieces in buttermilk, egg, and hot sauce for 30 minutes.
2. In a bowl, mix flour, cornstarch, paprika, garlic powder, salt, and pepper.
3. Dredge chicken until well coated in flour mixture.
4. Heat oil in a deep skillet over medium heat.
5. Fry chicken pieces for 4–5 minutes per side or until golden brown.
6. Set fried chicken on paper towels to drain excess oil.
7. Melt butter and honey together in a small saucepan.
8. Split the rolls and brush inside with honey butter.
9. Toast rolls lightly if desired.
10. Place one chicken nugget inside each roll.
11. Brush tops with remaining honey butter.
12. Serve warm.
