Homemade Chicken Pho

Description

A comforting bowl of chicken pho with charred aromatics, Vietnamese spices, and personalized Southern tweaks. Fragrant, nourishing, and simple enough for any home cook.


Ingredients

2.5 lbs bone-in chicken thighs, skinless

1 large yellow onion, halved and charred

4-inch piece of fresh ginger, sliced and charred

1 tsp whole cloves

1 tsp star anise

1 tsp coriander seed

2 tbsp fish sauce

1 tbsp rock sugar or brown sugar

8 oz rice noodles (pho-style)

Optional garnish: Thai basil, cilantro, lime wedges, bean sprouts, jalapeño slices


Instructions

Char the onion and ginger in a dry pan until slightly blackened.

Add chicken thighs to a large stockpot with 8 cups of water. Bring to a boil and skim foam.

Add charred onion, ginger, and spices. Simmer for 45 minutes, partially covered.

Remove chicken, shred when cool. Strain broth through mesh.

Return broth to heat. Add fish sauce and sugar; adjust salt to taste. Simmer 10 minutes.

Boil noodles according to package.

Assemble bowls by layering noodles, chicken, and ladling hot broth on top.

Garnish with Thai basil, cilantro, lime, and sprouts.

Notes

Store broth and noodles separately for best texture.

Char aromatics in dry pan or under broiler for best flavor.

Freeze broth alone and reheat fresh with toppings.
