A comforting and flavorful creamy chicken risotto made with Arborio rice, tender chicken, and savory broth, perfect for weeknight dinners or special occasions.
Ingredients
1.5 cups Arborio rice
2 tablespoons olive oil
1 lb cooked chicken, shredded
4 cups warm chicken broth
1 small onion, finely chopped
2 garlic cloves, minced
1/2 cup grated Parmesan (rennet-free)
Salt and black pepper to taste
Optional: spinach, lemon zest, parsley
Instructions
Warm the chicken broth separately on the stove.
Heat oil in a skillet over medium heat. Sauté onions for 2–3 minutes.
Add garlic and cook briefly. Stir in Arborio rice and toast 2–3 minutes.
Gradually add warm broth, one ladle at a time, stirring continuously.
After 10 minutes, stir in the shredded chicken and continue adding broth.
When rice is creamy and al dente (about 25–30 mins total), mix in Parmesan.
Season and garnish with parsley, lemon zest, or spinach if desired.
Notes
Use warm broth to help rice absorb liquid evenly.
Stirring regularly produces the signature creamy texture.
