Ingredients
1 bag tortilla chips (restaurant-style or thick-cut)
2 cups shredded cheddar-jack cheese (or pepper jack for heat)
1½ cups chili (homemade or leftovers)
½ cup chopped red onion
1 jalapeño, sliced thin
½ avocado, diced (optional)
1 tablespoon chopped cilantro
Sour cream or crema drizzle (optional)
Optional: black beans, corn, pickled red onions, cooked ground beef, or queso dip
Instructions
1. Preheat your oven to 375°F.
2. On a sheet pan, spread half of the chips and layer with half the cheese and chili.
3. Add remaining chips, followed by the rest of the chili and cheese.
4. Sprinkle onions and jalapeños over the top.
5. Bake in the center rack for 8–10 minutes until the cheese is bubbling.
6. Remove and top with avocado, cilantro, and crema or sour cream.
7. Serve immediately to maintain the crunch.
Notes
Swap chili with carnitas for a bold variation.
Add chipotle-honey sauce or roasted corn for a flavor boost.
Store leftovers for up to 2 days—reheat in oven or microwave in bursts.
Use thick chili to prevent soggy chips.
Make it a full meal with slaw or black beans.
