Description
Smoky, spicy chipotle chicken tacos made with juicy marinated thighs, served in warm tortillas with customizable toppings for the perfect taco night.
Ingredients
1½ lbs boneless skinless chicken thighs
2 chipotle peppers in adobo + 1 tbsp adobo sauce
2 tbsp fresh lime juice
2 tbsp olive oil
3 cloves garlic, minced
1 tsp ground cumin
Salt and pepper to taste
8 small corn or flour tortillas
Optional toppings: shredded cabbage, diced avocado, chopped cilantro, lime wedges, chipotle sauce
Instructions
Blend chipotle peppers, lime juice, olive oil, garlic, cumin, salt, and pepper until smooth.
Coat chicken thighs evenly with marinade and let stand 10–15 minutes or overnight.
Heat skillet over medium-high heat with 1 tbsp oil. Cook chicken 6–8 minutes per side until internal temperature reaches 165°F.
Remove from heat, rest 2–3 minutes, then slice or chop.
Warm tortillas in a dry skillet or over open flame.
Assemble tacos with chicken and your choice of toppings. Serve immediately.
Notes
Marinate longer for deeper flavor.
Substitute chicken breast if preferred.
Use store-bought chipotle sauce for quick prep.
