Ingredients
1 ¾ cups all-purpose flour
¾ cup brown sugar
½ cup unsweetened applesauce
½ cup vegetable oil
2 large eggs
1 teaspoon cinnamon
1 teaspoon baking soda
1 ½ cups finely diced apples
½ cup chopped walnuts (optional)
½ cup raisins or dried cranberries (optional)
Instructions
1. Preheat oven to 350°F (175°C), grease or line a 9×5-inch loaf pan.
2. Whisk flour, cinnamon, baking soda, and salt in a large bowl.
3. In another bowl, combine eggs, oil, applesauce, and sugar until smooth.
4. Stir wet ingredients into dry ingredients until just combined.
5. Fold in diced apples and any optional add-ins.
6. Pour batter into pan, smooth the top.
7. Bake for 55–60 minutes until golden and a toothpick comes out mostly clean.
8. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
