Description
Cinnamon raisin bread blends swirls of sweet cinnamon with juicy raisins in every golden slice. Whether toasted for breakfast, layered into French toast, or enjoyed plain with butter, it awakens childhood memories wrapped in a warm, spiced fragrance.
Ingredients
All-purpose flour – 3 ½ cups
Active dry yeast – 2¼ tsp
Granulated sugar – ¼ cup (plus 2 tbsp for filling)
Ground cinnamon – 1½ tbsp
Salt – 1 tsp
Warm milk (110°F) – 1 cup
Unsalted butter (softened) – 4 tbsp
Egg – 1 large
Raisins (soaked & drained) – 1 cup
Instructions
1. In a small bowl, activate yeast by mixing with warm milk and 1 tsp sugar. Let it sit for 5–10 minutes until frothy.
2. Mix 3 cups flour, salt, remaining sugar, egg, and butter in a large bowl. Pour in the yeast mixture and mix until a sticky dough forms.
3. Knead in the remaining flour gradually and fold in the drained raisins. Knead for another 6–8 minutes.
4. Lightly oil a bowl, place the dough in and cover. Let it rise for about 1 hour until doubled.
5. Roll out the dough into a rectangle. Sprinkle with cinnamon sugar blend and roll tightly into a log.
6. Place in greased loaf pan. Cover again and let hike up for 25–30 minutes.
7. Bake at 375°F for 30–35 minutes until golden and hollow-sounding when tapped.
8. Let cool in the pan for 10 minutes before lifting out to cool completely on a wire rack.
Notes
Try adding diced apples or chopped pecans for texture.
Swirl in cream cheese before baking for a richer loaf.
Soak raisins before use to keep them plump and juicy.
Pairs well with cream cheese and honey, or use it for French toast.
