If you ever reached into your elementary school lunchbox just hoping to find a fudgy treat that made recess worth enduring, you were probably dreaming of cosmic brownies. This homemade version brings all the nostalgia, minus the preservatives—with extra chew, chocolate, and fun.
Ingredients
1 cup (2 sticks) Unsalted butter
1¼ cups Granulated sugar
½ cup Packed brown sugar
4 Large eggs
1 tbsp Vanilla bean
¾ cup Cocoa powder (unsweetened)
1 cup All-purpose flour
½ cup Heavy cream
1 cup Semi-sweet chocolate chips
½ cup Cosmic rainbow chips (or mini M&Ms)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
2. Melt butter in a saucepan and stir in both sugars until dissolved.
3. Transfer to a bowl. Add eggs, vanilla, and cocoa. Beat until glossy.
4. Fold in flour gently until just combined.
5. Pour batter into prepared pan and smooth evenly.
6. Bake 25–28 minutes—edges should be set, center soft.
7. Heat cream until almost boiling. Pour over chocolate chips. Wait, then stir until smooth.
8. Spread ganache on cooled brownies. Sprinkle with rainbow chips.
9. Chill for 30 minutes to set ganache. Slice and serve.
Notes
Customize with cookie crumbles, peppermint, or nut butter swirls.
For a healthier spin, try coconut sugar or pureed black beans.
Refrigerate leftovers in an airtight container up to 5 days.
