Ingredients

45 large croissants (day-old preferred)

6 large eggs

2 cups milk (or almond/oat milk)

1½ cups shredded cheese (Gruyère, cheddar, or Mexican blend)

1 cup cooked breakfast meat

Optional vegetables: spinach, onions, bell peppers

Salt, pepper, herbs de Provence


Instructions

1. Preheat oven to 350°F and grease a 9×13 baking dish.

2. Tear croissants into 2-inch pieces and layer in dish.

3. Sauté vegetables and cooked meat; layer over croissants.

4. Whisk eggs, milk, salt, pepper, and herbs in a bowl.
