Rich, creamy cheesecake meets a tangy raspberry swirl in this easy-to-make dessert bar perfect for parties, buffets, and potlucks.
Ingredients
2 cups graham cracker crumbs
1/2 cup melted unsalted butter
2 tbsp sugar
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp lemon juice
1 tsp vanilla paste (alcohol-free)
3/4 cup raspberry preserves (seedless)
Instructions
Preheat oven to 325°F. Line a 9×13 pan with parchment.
Mix graham crumbs, butter, and sugar to form crust.
Press crust mixture firmly into base of pan.
Beat cream cheese until smooth, then add sugar.
Add eggs one at a time, beating well after each.
Stir in lemon juice and vanilla paste.
Pour filling over crust and smooth the top.
Drop spoonfuls of raspberry preserves over top and swirl.
Bake for 35 minutes until center is just set.
Cool at room temperature for 1 hour, then refrigerate for 2 hours or more.
Lift and slice into bars to serve.
Notes
Use seedless jam for best swirl.
Bars can be chilled overnight for firmer texture.
