Description

Ingredients

3 medium ripe bananas, mashed

2 cups all-purpose flour

3/4 cup granulated sugar

1 tsp baking soda

1/2 tsp salt

2 large eggs

1/3 cup vegetable oil

1 tsp alcohol-free vanilla extract


Instructions

Preheat oven to 350°F and grease a loaf pan or line with parchment.

In a large bowl, mash bananas and whisk in sugar, eggs, oil, and vanilla.

In a separate bowl, mix flour, salt, and baking soda.

Combine wet and dry ingredients just until mixed—don’t overdo it.

Pour into loaf pan and smooth the top.

Bake 45–50 minutes until a toothpick inserted into the center comes out clean.

Cool in pan for 10 minutes, then remove and slice.

Notes

You can fold in 1/2 cup nuts or dairy-free chocolate chips before baking.

Swap flour with gluten-free blend if needed.
