Ingredients
1 lb ground chicken
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh dill
Zest of 1 lemon
3 cloves garlic, minced
1 egg
1/3 cup panko breadcrumbs
Salt and black pepper to taste
Instructions
Preheat oven to 400°F.
Line a baking tray with parchment paper or grease lightly with olive oil.
In a large bowl, mix ground chicken, feta, dill, lemon zest, garlic, egg, breadcrumbs, salt, and pepper.
Use a cookie scoop to form 1 ½-inch meatballs.
Place meatballs evenly on the baking tray.
Bake for 20 minutes or until internal temperature reaches 165°F.
Let rest for 3 minutes before serving.
Notes
Freeze cooked meatballs in a single layer and store for up to 2 months.
Reheat in air fryer or oven for quick meals.
