Description
Juicy, flavorful Greek chicken skewers marinated in olive oil, lemon, garlic, and oregano. Grill or bake for a quick, delicious meal infused with Mediterranean flavor.
Ingredients
1.5 lbs boneless, skinless chicken breast or thigh (cut into 1.5-inch pieces)
1/3 cup extra-virgin olive oil
Juice and zest of 1 large lemon
4 garlic cloves, minced
1 tbsp dried oregano or 2 tbsp fresh chopped oregano
Salt to taste (about ¾ tsp)
Black pepper to taste (about ½ tsp)
Optional: pinch of paprika or cumin
Instructions
Whisk olive oil, lemon juice and zest, garlic, oregano, salt, and pepper in a bowl.
Add chicken pieces and mix well, ensuring even coating.
Cover and marinate in the fridge for at least 30 minutes or up to overnight.
Thread marinated chicken onto pre-soaked wooden or metal skewers.
Grill over medium-high heat for 5–6 minutes per side or until internal temp reaches 165°F.
Let rest for 3 minutes before serving. Enjoy with sauce of choice.
Notes
For baking: Preheat oven to 425°F. Bake on parchment-lined sheet for 18–20 minutes, flipping halfway. Broil for 2 minutes for a grilled finish.
Serve with tzatziki, hummus, or Greek salad. Ideal for pita sandwiches or rice bowls.
