Description
A vibrant and refreshing Mediterranean-inspired salad made with chickpeas, cherry tomatoes, cucumbers, olives, and a zesty olive oil dressing. Perfect for meal prep or summer gatherings.
Ingredients
2 cups canned chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 medium cucumber, diced
1/4 cup thinly sliced red onion
1/3 cup sliced Kalamata olives
1/3 cup crumbled feta cheese (optional)
2 tbsp chopped fresh parsley
3 tbsp extra virgin olive oil
2 tbsp red wine vinegar
1 tbsp fresh lemon juice
Salt and pepper to taste
Instructions
Drain and rinse chickpeas.
Chop all vegetables.
Combine chickpeas, tomatoes, cucumbers, onion, olives, and parsley in a large bowl.
In a small bowl, whisk olive oil, vinegar, lemon juice, salt, and pepper.
Pour dressing over salad and toss well.
Chill for 15 minutes before serving. Add feta on top if using.
Notes
Store in refrigerator for up to 4 days.
Add mint or swap beans for variation.
