Who says waffles are just for breakfast? Homemade coney waffles combine crispy, sweet waffles with spicy chili-smothered hot dogs. They’re the perfect fusion of diner comfort and backyard fun. Great for entertaining, feeding kids, or shaking up weeknight dinner.
Ingredients
2 cups all-purpose flour
2 tbsp sugar
2 eggs
1 3/4 cups buttermilk (or almond milk + 1 tbsp vinegar)
1/2 cup melted butter
1 lb ground beef (or vegan alternative)
8 oz tomato sauce
1 tsp cumin
1 tsp smoked paprika
8 turkey sausages
Diced onion
Shredded cheddar
Spicy mustard
Optional: green chiles, dairy-free cheese, gluten-free flour
Instructions
1. Brown ground beef in a skillet over medium heat.
2. Add onion, tomato sauce, cumin, and paprika. Simmer uncovered for 20 minutes.
3. Preheat waffle iron.
4. Mix flour, sugar, and baking powder in a bowl.
5. Whisk eggs with buttermilk and melted butter in another bowl.
6. Combine wet and dry ingredients until smooth.
7. Cook waffles until golden and crisp (3-4 minutes).
8. Grill or pan-sear hot dogs until skin chars.
9. Fold waffle around hot dog, spoon on chili, and top with cheddar, mustard, and onions.
10. Serve immediately.
Notes
Keep waffles crisp in a 200°F oven if preparing multiples.
Try adding jalapeños or cheddar to waffle batter.
Swap chili with brisket for a Texas twist.
Serve with slaw, sweet potato chips, or pickles for crunch.
