Easy Lamb Curry

Description

A richly spiced, aromatic lamb curry with tender chunks of lamb, layered spices, and a creamy tomato-coconut base. Perfect for weeknight dinners or weekend gatherings.


Ingredients

1.5 lbs lamb shoulder or leg, cut into chunks

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh grated ginger

1.5 teaspoons turmeric

1 tablespoon ground coriander

1 teaspoon cumin

1 teaspoon smoked paprika

1.5 teaspoons garam masala

1 teaspoon salt

1/2 teaspoon black pepper

1 cup canned crushed tomatoes

1 cup water or broth

1/2 cup full-fat coconut milk

Fresh cilantro for garnish


Instructions

Heat oil in a heavy pot and sauté onions until golden, about 10 minutes.

Add garlic and ginger, saute for 1 minute.

Stir in all spices (turmeric, cumin, coriander, paprika, garam masala) and toast for 30 seconds.

Add the lamb and brown on all sides.

Pour in tomatoes, salt, pepper, and cook for 5 minutes.

Add broth, cover, and simmer on low for 45 minutes.

Stir in coconut milk and simmer uncovered for another 15–20 minutes.

Garnish with chopped cilantro and serve hot.

Notes

For more heat, add chopped green chili with the garlic and ginger.

Use shoulder cut for best flavor and texture after simmering.

Tastes even better the next day after spices meld fully.
