Ingredients
Whole grain sandwich roll
4 oz sliced halal turkey breast
2 tbsp red pepper hummus
1/2 cup spinach leaves
1/4 cup shredded carrot
5–6 cucumber slices
1 tsp lemon juice
Instructions
Slice the sandwich roll and toast lightly, if desired.
Spread the hummus evenly on the bottom half.
Layer spinach leaves across the hummus.
Add halal turkey and top with shredded carrot and cucumber slices.
Drizzle with lemon juice.
Close the sandwich and press gently to secure.
Notes
Feel free to swap the turkey with grilled tofu or chickpea patties for a vegetarian option.
