A bold, fusion-style sandwich blending the creamy richness of cheddar with the fermented punch of kimchi and a spicy mayo twist.
Ingredients
2 slices sourdough bread
1/2 cup shredded sharp cheddar cheese
1/4 cup drained kimchi
1 tbsp mayonnaise mixed with 1 tsp gochujang
1 tbsp butter (or avocado oil)
Instructions
Butter one side of each bread slice.
Spread gochujang mayo on the opposite side of both slices.
Layer cheese and kimchi on bread; close the sandwich.
Grill in skillet over medium heat, 2–3 minutes per side.
Toast until golden brown and cheese is melted.
Rest for 1 minute, slice, and serve.
Notes
Use gluten-free bread if needed.
Adjust spiciness by changing kimchi type or gochujang amount.
