Ingredients
Pan drippings from roasted turkey – 1/2 cup (or substitute with butter or turkey stock)
Unsalted butter (if needed) – 4 tbsp
All-purpose flour – 1/4 cup
Turkey stock (or chicken broth) – 2–3 cups
Garlic powder – 1/2 tsp
Salt & cracked pepper – To taste
(Optional) Soy sauce – 1 splash
Instructions
1. Place your saucepan over medium heat and pour in the turkey drippings or melt the butter.
2. Whisk in the flour and stir constantly to form a smooth roux. Cook it gently for 3–4 minutes until golden brown.
3. Slowly add the turkey stock, stirring constantly to avoid lumps.
4. Add garlic powder, salt, and pepper. Let the mixture simmer until thickened—about 8–10 minutes.
5. Taste your gravy. Add soy sauce, cream, or more seasoning as needed.
6. (Optional) Strain or blend to fix any lumps if necessary.
Notes
Make ahead and store in the fridge for 3–4 days or freeze for up to 3 months.
Reheat on low heat, whisking to restore texture.
No drippings? Use butter and rich broth as a substitute.
Try adding a splash of bone broth or soy sauce for extra depth.
