A meal-sized viral big salad packed with romaine, avocado, black beans, roasted corn, tortilla strips, and chipotle-lime dressing.
Ingredients
4 cups chopped romaine or mixed greens
1 cup cherry tomatoes, halved
1 avocado, sliced
1/2 cup black beans
1/2 cup roasted corn
1/4 cup pickled red onions
1/3 cup tortilla strips
2 tablespoons chipotle-lime dressing
Instructions
Chop and prep all vegetables.
Layer greens, black beans, tomatoes, corn, and onions in a large bowl or platter.
Add avocado slices.
Drizzle with chipotle-lime dressing.
Top with tortilla strips and serve immediately.
Notes
Add quinoa or chickpeas for extra protein.
Keep dressing separate until ready to serve if prepping in advance.
