Ingredients
2 cups thawed sweet potato hashbrowns
8 whole eggs
½ cup diced bell peppers
¼ cup green onions
½ tsp smoked paprika
1 tsp onion powder
½ tsp garlic powder
1 tsp salt
¼ tsp black pepper
½ cup shredded mozzarella or dairy-free cheese
Instructions
Preheat oven to 375°F and grease a ceramic baking dish.
In a bowl, whisk eggs with spices and seasonings.
Layer sweet potato hashbrowns, peppers, and onions in dish.
Pour egg mixture over the layers and top with cheese.
Bake for 30 minutes, then cool for 5 minutes before serving.
