Description

Golden, juicy, and impossibly crunchy, this viral crispy chicken recipe uses a flavorful yogurt marinade and a cornflake crust to deliver an unforgettable meal without deep frying.


Ingredients

1.5 lbs boneless, skinless chicken thighs or breasts

1 cup Greek yogurt

2 tablespoons Dijon mustard

1 tablespoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

Salt and pepper to taste

2 cups crushed cornflakes or panko

2 tablespoons olive oil (optional)

Cooking spray


Instructions

Mix yogurt, mustard, garlic powder, onion powder, paprika, cayenne, salt, and pepper in a bowl.

Add chicken pieces and coat well. Marinate for 30 minutes or overnight.

Preheat air fryer or oven to 400°F.

Coat chicken in crushed cornflakes, pressing to adhere.

Place on rack or basket sprayed with cooking spray.

Air fry for 20 minutes (flip halfway). Bake for 25 minutes or until crisp and at 165°F internal temp.

Let rest a few minutes and serve hot.

Notes

Use buttermilk instead of yogurt if preferred.

Double the cayenne for an extra kick.
