Ingredients
2 lbs Boneless chicken thighs or breasts
1/2 cup Balsamic vinegar
1/4 cup Olive oil
4 cloves Minced garlic
2 tbsp Honey or brown sugar
Salt & pepper to taste
1 tsp Fresh rosemary (optional)
Instructions
1. In a large mixing bowl, whisk together balsamic vinegar, olive oil, garlic, honey, and seasonings.
2. Add the chicken and coat thoroughly. Cover and refrigerate.
3. Preheat oven to 425°F or set stovetop to medium-high heat.
4. For baked: Spread chicken in a single layer in a baking dish. Cook for 22–25 minutes or until internal temp reaches 165°F.
5. For stovetop: Sear each side for 4–5 minutes until golden, then reduce heat until fully cooked.
6. Optional: Simmer marinade on the side for 5 minutes and drizzle over cooked chicken for extra depth.
Notes
Let the chicken marinate for at least 30 minutes—2 hours is ideal for deeper flavor.
Use a glass or non-reactive bowl to avoid altering the taste.
Pairs well with mashed potatoes, arugula salad, roasted vegetables, or quinoa.
Leftovers can be used in wraps, salads, or protein bowls.
Freeze cooked portions for up to 2 months and reheat gently for best results.
