Ingredients
1 cup cooked cilantro-lime rice
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/4 cup black beans
1/4 cup corn kernels
1/4 avocado, sliced
2 tablespoons fresh salsa
1 tablespoon Greek yogurt (optional)
Chopped cilantro and lime wedges for garnish
Instructions
Cook 1 cup cilantro-lime rice according to your preferred method.
Season chicken with olive oil, chili powder, cumin, and garlic powder.
Grill chicken for 6–7 minutes per side. Slice once cooked.
Sauté bell peppers with a little olive oil for 5 minutes.
In a bowl, layer rice, grilled chicken slices, peppers, black beans, corn, and avocado.
Top with salsa, Greek yogurt, chopped cilantro, and lime.
Notes
Substitute quinoa for rice to increase fiber.
Add jalapeños or chipotle cream for extra spice.
