Description
A quick, healthy and flavorful chicken meatball recipe perfect for weeknights, meal prep or family dinners.
Ingredients
1 lb ground chicken
1/3 cup breadcrumbs
2 tbsp milk or broth
1 small zucchini, grated
1 egg
2 garlic cloves, minced
1/4 small onion, finely chopped
1/2 tsp sea salt
1/4 tsp black pepper
1/2 tsp dried oregano
1 tbsp olive oil
Fresh parsley or chives for garnish
Instructions
Preheat oven to 400°F or heat skillet over med heat.
Soak breadcrumbs in milk or broth in small bowl.
Mix chicken, soaked crumbs, egg, garlic, onion, zucchini, herbs, salt, and oil in one bowl.
Gently shape into 1.5 inch meatballs using scoop or hands.
Place on parchment-lined baking sheet or in skillet.
Bake 18–20 minutes or pan-fry until golden and internal temp hits 165°F.
Garnish as desired and serve with your favorite sauce or sides.
Notes
Use thigh meat for a juicier texture.
Can substitute gluten-free breadcrumbs or use almond flour.
Freezes well up to 3 months.
