A heartwarming bowl of chicken noodles with a Southern twist—tender chicken, bold flavors, and thick noodles packed into a comforting broth.
Ingredients
1 lb boneless, skinless chicken breasts
2 tablespoons olive oil
3 carrots, sliced
2 celery stalks, diced
1 medium yellow onion, chopped
4 garlic cloves, minced
8 oz wide egg noodles
8 cups low-sodium chicken broth
1 teaspoon dried thyme
2 bay leaves
Salt and pepper to taste
1/2 tsp turmeric (optional)
Chopped parsley for garnish
Instructions
Heat oil in pot; sauté onions, carrots, and celery for 6–7 minutes.
Add garlic, thyme, and turmeric. Cook 1 minute.
Pour in broth. Add chicken and bay leaves. Simmer 20 minutes.
Remove chicken, shred it, return to broth.
Stir in noodles. Cook 7–9 minutes uncovered.
Season and garnish with parsley before serving.
Notes
Use rotisserie chicken for quicker prep.
Substitute gluten-free noodles as needed.
