Ingredients
2 boneless, skinless chicken breasts, cut into strips
12 oz pasta
1 cup cream
1/2 cup chicken broth
1 cup Parmesan cheese, grated
2 cloves garlic, minced
1 cup sun-dried tomatoes, chopped
1 cup fresh spinach
Salt and pepper to taste
Olive oil for cooking
Optional: a pinch of red pepper flakes
Instructions
Season the chicken with salt and pepper. Heat oil and cook chicken until golden brown, then set aside.
Boil pasta as directed and reserve a cup of pasta water.
Sauté garlic and tomatoes, then add cream and broth to the skillet.
Return chicken to skillet, add Parmesan and pasta, and mix well.
Fold in spinach, using pasta water if needed.
Notes
Substitute Greek yogurt for a healthier sauce.
Use reserved pasta water to adjust sauce consistency.
