Description
Quick and flavorful chicken tacos made using marinated chicken thighs, served in warm corn tortillas and topped with fresh cabbage, avocado, and cotija cheese.
Ingredients
1.5 lbs boneless skinless chicken thighs
2 tbsp avocado oil
1 tbsp chili powder
1 tsp smoked paprika
1 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tsp sea salt
Juice of 1 lime
8 corn tortillas
1 cup shredded green cabbage
1/2 cup diced red onion
1 avocado, sliced
1/2 cup chopped fresh cilantro
1/2 cup crumbled cotija cheese
Instructions
In a mixing bowl, combine all spices. Rub chicken thighs with oil, lime juice, and seasoning.
Let marinate while heating a nonstick or cast iron skillet over medium-high heat.
Cook chicken for 5–6 minutes on each side, until internal temperature hits 165°F.
Let rest 5 minutes before slicing.
Warm tortillas on skillet and set aside.
Fill each tortilla with sliced chicken, cabbage, onion, avocado, and cotija cheese.
Garnish with fresh cilantro and a squeeze of lime.

Swap thighs with chicken breast for leaner protein
