Description
Easy, delicious plant-based burgers made with chickpeas, garlic, lemon, and fresh herbs. Perfect for weeknight dinners or meal prep.
Ingredients
2 cups canned chickpeas, drained and rinsed
1/2 cup chopped red onion
2 cloves fresh garlic, minced
1/4 cup chopped parsley or cilantro
1 tbsp lemon juice
1 tsp cumin
1 tsp paprika
1/2 cup breadcrumbs (or almond meal)
Salt and pepper, to taste
2 tbsp olive oil
Instructions
Pulse chickpeas in a food processor until coarsely mashed.
Add onions, garlic, herbs, lemon juice, and spices. Pulse just until combined.
Transfer to a bowl and stir in breadcrumbs until mixture holds together.
Form into 4–5 patties.
Heat oil in skillet and cook patties for 4–5 minutes on each side, until golden.
Serve with buns, flatbread, or salad and desired toppings.
Notes
Use oats or gluten-free flour if avoiding gluten.
Can be frozen before or after cooking.
Pair with creamy sauces like tahini or smashed avocado.
