Description
These plant-based tacos are filled with crispy, seasoned chickpeas, layered with fresh toppings, and wrapped in warm tortillas for a quick and healthy meal.
Ingredients
1 can (15 oz) chickpeas, rinsed and drained
2 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp chili powder
Salt and black pepper to taste
8 small corn tortillas
1 cup shredded cabbage
Lime crema or dairy-free yogurt
Optional: jalapeño slices, avocado, cilantro
Instructions
Pat chickpeas dry with a paper towel.
Heat oil in a skillet over medium-high heat. Add chickpeas and spices.
Cook for 12–15 minutes, stirring occasionally, until golden and crisp.
Warm tortillas in a pan or wrapped in a damp towel in microwave.
Assemble tacos: spread crema or yogurt, add chickpeas, top with cabbage and extras.
Serve immediately.
Notes
Use an air fryer for extra crisp chickpeas.
