Ingredients
6 cups crumbled cornbread (store-bought or homemade, not overly sweet)
1 lb beef sausage (Italian or spicy breakfast sausage work well)
1 medium onion, diced (yellow or sweet)
3 stalks celery, diced
2 cups chicken broth (or vegetable broth)
½ cup butter
1 tbsp fresh sage
1 tbsp fresh thyme (or 1 tsp dried each)
2 eggs, beaten
Instructions
1. Preheat oven to 375°F. Grease a 9×13 baking dish with butter or non-stick spray.
2. In a skillet over medium heat, brown and crumble sausage (about 8 minutes). Transfer to plate.
3. In same pan with sausage drippings, sauté onions and celery for 5 minutes. Add herbs and a pat of butter.
4. In a large bowl, combine cornbread, sausage, veggies, and herbs. Toss gently.
5. Beat eggs with broth. Pour over mix and stir until evenly moistened (add more broth if needed).
6. Transfer mix to baking dish. Dot top with butter. Bake uncovered 35–40 minutes until golden and crisp.

Make ahead tip: Prepare a day before and reheat before serving.
For plant-based version, use vegan sausage and mushroom broth.
Pairs beautifully with turkey gravy or fried eggs for a stuffing hash.
