Ingredients
5 large eggs
1 cup cottage cheese (full-fat recommended)
2 cups fresh spinach (or 1 cup cooked)

Instructions
1. Preheat oven to 375°F (190°C). Grease a 9-inch pie or casserole dish.
2. In a large bowl, whisk eggs and cottage cheese until frothy. Season with salt, pepper, and herbs.
3. Stir in spinach (sautéed or drained).
4. Add shredded cheese and optional add-ins.
5. Pour mixture into dish. Tap gently to remove bubbles.
