4 boneless chicken thighs

1 cup whole berry cranberry sauce

1/2 cup French dressing

1 envelope onion soup mix

1 tbsp olive oil

Fresh rosemary or parsley (optional)


Instructions

1. Preheat oven to 375°F. Lightly grease a baking dish.

2. Heat olive oil in a skillet; sear both sides of the chicken 2–3 minutes until golden. Remove from heat.

3. In a bowl, mix cranberry sauce, French dressing, and onion soup mix until evenly combined.

4. Place seared chicken in the baking dish. Pour the cranberry mixture over chicken evenly.

5. Cover with foil. Bake for 25 min. Remove foil and bake uncovered another 5-10 mins to caramelize edges.

6. Top with fresh rosemary or parsley before serving.

Notes

Substitute chicken breasts for thighs if preferred, but reduce baking time.

For a spicy kick, add chili flakes or Dijon mustard to the sauce.

Try adding chopped pecans during the final bake for crunch.

Slow cooker option: Cook 4 hrs on high or 7 on low.
