Ingredients
2 cups cooked black beans
1 cup cooked brown rice or quinoa
1 red bell pepper, diced
1 cup frozen corn kernels
1 small red onion, finely diced
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1 lime, juiced
Salt & pepper to taste
1/2 cup dairy-free cheese shreds or nutritional yeast
8 large whole-wheat or gluten-free tortillas
Instructions
Heat a large skillet and sauté red onion and bell pepper until soft.
Stir in beans, corn, rice, and spices. Cook for 4–5 minutes.
Add lime juice, adjust seasoning.
Warm tortillas and place filling in the center.
Sprinkle cheese or yeast, roll tightly burrito-style.
Wrap in foil, clearly label, and freeze flat in bags.
