One-Pot Chicken Rice Bowl

Description

This easy one-pot chicken rice bowl is a quick, comforting weeknight dinner made with chicken thighs, seasoned rice, and veggies cooked in one pan for minimal cleanup and maximum flavor.


Ingredients

1 cup long-grain rice (jasmine preferred)

1 lb boneless chicken thighs, cubed

1 1/2 cups chicken broth

1 medium onion, chopped

3 garlic cloves, minced

1 1/2 tsp smoked paprika

1 cup frozen peas and carrots

2 tbsp cooking oil

Salt and pepper to taste


Instructions

Heat oil in a deep skillet over medium heat.

Add chicken with salt, pepper, paprika; sauté until golden brown (5 min).

Stir in onion and garlic; cook 2 more minutes.

Add rice and stir well to coat grains.

Pour in broth; bring to low boil.

Cover, reduce heat, and simmer for 18 minutes.

Add frozen veggies, cover again for 2 minutes.

Fluff rice and season to taste.

Notes

Use chicken breast or tofu for variations.

Add fresh herbs after cooking for extra flavor.

Store leftovers in airtight glass containers.
