Ingredients
2 cups cooked quinoa
1 cup shredded balsamic chicken
1/2 cup cooked spinach
1 cup dairy-free cheese
1/2 teaspoon garlic powder
1 can coconut milk
1/4 cup crushed rice cakes or breadcrumbs
Instructions
Preheat oven to 375°F and grease a casserole dish.
In a large bowl, mix quinoa, shredded chicken, spinach, cheese, garlic powder, and coconut milk.
Transfer the mixture to the dish, top with crushed rice cakes or breadcrumbs.
Bake for 25–30 minutes until bubbly and slightly golden.
Let cool, portion, and store in freezer-safe containers.
