Description
A fresh, customizable Greek chicken bowl that combines marinated grilled chicken with grains, crisp veggies, and creamy tzatziki for a Mediterranean meal that fuels and satisfies.
Ingredients
1.5 lbs boneless chicken thighs or breasts
1/4 cup olive oil
2 tbsp lemon juice
3 garlic cloves, minced
1 tsp dried oregano
Salt and black pepper to taste
2 cups cooked rice or quinoa
1 cup chopped cucumber
1 cup halved cherry tomatoes
1/2 cup red onion, sliced
1/2 cup Kalamata olives, pitted
1/2 cup crumbled feta cheese
1 cup tzatziki sauce
Fresh herbs (mint or parsley) for garnish
Instructions
1. Marinate chicken in olive oil, lemon juice, garlic, oregano, salt, and pepper for at least 20 minutes or overnight.
2. Preheat grill pan or skillet and cook chicken for 5–7 minutes per side until golden and fully cooked.
3. Let chicken rest, then slice.
4. Prepare grains (rice or quinoa) and warm if needed.
5. Chop vegetables and herbs.
6. Assemble bowls: base of grains, topped with veggies, sliced chicken, tzatziki, feta, and olives.
7. Optional garnishes: sumac, paprika, mint.
