Ingredients
2 lbs chicken thighs (bone-in)
1/4 cup fresh lemon juice
4 garlic cloves, crushed or minced
1/4 cup olive oil (extra virgin)
1 tsp oregano
1/2 tsp thyme
1/2 tsp rosemary
1/2 tsp paprika (optional)
Salt and black pepper to taste
Instructions
1. In a large bowl or zip-lock bag, combine lemon juice, olive oil, garlic, herbs, salt, and pepper.
2. Add the chicken and massage everything well. Refrigerate for at least an hour.
3. Preheat your oven to 400°F or set your grill to medium-high heat.
4. Remove chicken from marinade, place on baking sheet or grill grates.
5. Roast or grill for about 35–40 minutes, flipping halfway.
6. Rest meat 5 minutes after cooking for juicier bites.
Notes
Searing in cast iron before baking adds extra crispiness.
Try the marinade with tofu or cauliflower for a vegetarian twist.
Pairs well with tabbouleh, roasted veggies, or couscous salad.
