Ingredients
1 cup brown rice
2 cups low-sodium chicken broth
2 cups cooked shredded chicken
1/2 cup shredded part-skim mozzarella
1/2 tsp Italian seasoning
1 cup frozen spinach
1 small onion, chopped
2 cloves garlic, minced
Salt and pepper to taste
Olive oil spray
Instructions
1. Preheat oven to 375°F and spray a baking dish with olive oil.
2. In a skillet, sauté chopped onion and garlic until fragrant.
3. Add rice, broth, and shredded chicken. Stir to combine.
4. Add spinach, Italian seasoning, salt, and pepper.
5. Transfer to the prepared baking dish.
6. Top with mozzarella and bake for 25–30 minutes until bubbly.
Notes
For extra creaminess, blend a little Greek yogurt into the broth before baking.
Use turkey or rotisserie chicken for convenience.
