Description
A hearty, HIGH PROTEIN FREEZER dish packed with chicken, quinoa, beans, and veggies. Perfect for meal prep and family dinners.
Ingredients
2 cups cooked quinoa
1 pound shredded cooked chicken
1 cup chopped spinach
1/2 cup shredded mozzarella
1/4 cup olive oil
1/2 cup chopped red onions
1 can black beans (rinsed and drained)
1 tsp cumin
Salt and pepper to taste
Instructions
Preheat oven to 375°F.
In a bowl, mix quinoa, chicken, spinach, onions, black beans, olive oil, and spices.
Spread evenly into greased 9×13 baking dish.
Top with cheese and bake uncovered for 25 minutes.
Cool for 15 minutes.
Portion into freezer-safe containers and label.
Notes
Use foil to cover while baking for a softer texture.
Swap chicken with turkey or tofu for variations.
