Ingredients
1 lb lean ground chicken
1 tbsp olive oil
2 tsp paprika
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp salt
2 cups cooked brown rice
1/2 cup canned black beans
1/2 cup corn kernels
1/2 cup diced tomatoes
1/4 cup diced red onion
1/2 avocado, sliced
Juice of 1 lime
Optional toppings: shredded lettuce, low-fat Greek yogurt, salsa
Instructions
Heat olive oil in skillet. Add ground chicken and cook until browned.
Season with paprika, garlic powder, cumin, and salt.
Warm rice in a separate pot or microwave.
In a bowl, toss black beans, corn, diced tomatoes, red onion, and lime juice.
Layer bowl with rice, chicken, veggie mix, avocado, and desired toppings.
