Description
Sweet and tangy Honey Lime Chicken stuffed into creamy ripe avocados, topped with bright fresh corn salsa. An easy summer bite full of big flavor.
Ingredients
2 boneless chicken thighs
2 tablespoons honey
Juice of 2 limes
1 garlic clove, minced
1 tablespoon olive oil
Salt and pepper to taste
2 large ripe Hass avocados
1 cup fresh corn kernels
1 small tomato, diced
1/4 cup red onion, finely chopped
2 tablespoons fresh cilantro, chopped
Extra lime wedges for serving
Instructions
1. In a bowl, whisk honey, lime juice, garlic, olive oil, salt, and pepper. Add chicken and marinate for at least 30 minutes.
2. Heat a skillet over medium-high heat. Sear chicken 5–6 minutes per side until cooked through. Let rest 5 minutes, then slice.
3. While chicken cooks, toss corn, tomato, onion, cilantro, and lime juice in a bowl for fresh salsa.
4. Cut avocados in half, remove pit, and scoop a little extra flesh to make room.
5. Fill avocado halves with sliced chicken, top with corn salsa, and serve with extra lime wedges.
Notes
Brush cut avocado with lime juice to prevent browning if prepping ahead.
Store leftover cooked chicken separately and stuff fresh avocados when ready to eat.
Add warm tortillas on the side for fun taco-style bites.
