Description

Easy dump-and-go freezer meal with chicken, beans, and salsa that cooks straight from frozen in your Instant Pot. A perfect solution for busy weeknights.


Ingredients

Scale

2 pounds boneless skinless chicken thighs

2 cups salsa (your choice of heat)

1 cup black beans, drained

1 cup frozen corn

2 tablespoons taco seasoning


Instructions

Label and freeze all ingredients in a flat freezer-safe bag.

When ready to cook, place frozen contents into the Instant Pot.

Add 1/4 cup water or broth if needed to prevent burning.

Close lid, set valve to Sealing, and pressure cook on High for 20 minutes.

Allow 10 minutes natural release, then quick release remaining pressure.

Shred the chicken directly in the pot and stir to combine.

Notes

Serve over rice, in tacos, or with baked potatoes.

Add lime juice and fresh cilantro before serving for freshness.
