Description
A versatile, time-saving Instant Pot mealprep base made with chicken thighs, brown rice, and seasonal veggies. Great for fridge or freezer storage.
Ingredients
2 lbs boneless skinless chicken thighs
1 cup brown rice
1 tbsp olive oil
2 cups low-sodium broth
1 medium onion, diced
2 cloves garlic, minced
2 medium carrots, chopped
1 red bell pepper, diced
Instructions
Set Instant Pot to Sauté. Add olive oil, onion, garlic, and carrots. Sauté until soft.
Add chicken thighs and lightly brown.
Deglaze with a splash of broth, scrape up any bits stuck to bottom.
Add rice, rest of the broth, and bell pepper. Stir.
Seal lid, pressure cook on High 9 minutes.
Natural release for 10 minutes, then quick release.
Open lid, stir and cool before portioning for storage.
Notes
Sub beans or tofu for a vegetarian version.
