Ingredients
1.5 lbs boneless skinless chicken thighs
1 tbsp avocado oil
1 tsp paprika
1 tsp garlic powder
Salt and pepper to taste
2 cups chopped zucchini
1 cup chopped red bell pepper
1/2 onion, sliced
2 cloves garlic, minced
1/4 cup low-sodium chicken broth
2 tbsp cream cheese
Handful chopped fresh parsley
Instructions
Heat oil in a skillet over medium-high heat.
Slice and season chicken with spices, salt, and pepper.
Sauté chicken for 6–8 minutes until cooked through; set aside.
In the same skillet, cook onions, garlic, peppers, and zucchini for 4–5 minutes.
Pour in chicken broth and stir in cream cheese until smooth.
Return chicken to pan, mix, and simmer for another 2–3 minutes.
Garnish with fresh parsley before serving.
