1 cup carrots, diced

1 cup celery, chopped

1 onion, chopped

2 cloves garlic, minced

8 cups turkey or chicken broth

1 tsp dried thyme

Salt & pepper to taste

Optional: 1 cup cooked rice or noodles


Instructions

1. In a large pot, heat a splash of olive oil over medium heat. Add onions, carrots, and celery; cook for 8–10 minutes until softened.

2. Add garlic and cook for another minute.

3. Pour in broth and bring to a gentle boil.

4. Add turkey, thyme, salt, and pepper. Reduce heat and simmer uncovered for 25–30 minutes.

5. If using rice or noodles, stir them in during the last 10 minutes.

6. Taste and adjust seasoning. Serve hot.
